Easy Healthy Mango Lassis (Vegan, Paleo, GF, Refined Sugar Free, Natural)

Looking for creamy, fruity, sweet, tropical heaven? Then look no further than this recipe for mango lassis! If you don't know what mango lassis are, they're a creamy sweet South Asian drink made traditionally with mangoes, yogurt, cream, cardamom, saffron, and rose water. Here, the drink gets a healthy re-vamp, made vegan, fruit-sweetened, and natural. These mango lassis are the perfect balance of mango, coconut, banana, cardamom, and rose, and the texture is like a dreamy thick smoothie. There are additional optional add-ins for some interesting flavor combinations. Plus this drink is so simple and quick. So whip up one of these lassis for a sweet, cool, creamy treat.




As per usual, this recipe is: vegan, gluten-free, fruit-sweetened, and naturally colored. And this time around it's paleo too. And delicious. And has a great texture. AND is easy. So what are you waiting for? Go make this satisfying pretty drink!

I'm skipping the substitutions this time around too, bc I want to get to the recipe. By now, most of you probably have pretty good intuitions for substitutes in my recipes. This recipe is pretty forgiving, in that you can make almost any substitution without ruining the recipe. If you have a question abt a substitution for the ingredients in this recipe, leave a comment and I'll let you know if it works!


This drink is fruity, sweet, tropical, cool, and creamy, the perfect pick-me-up in the dead of winter. Seriously, go make this drink. You don't need fresh mango to be in season to make it.

Healthy Mango Lassis (Raw, Vegan, GF, Paleo, Fruit-Sweetened, Natural)

Soak Time: 20 minutes

Prep Time: 5 minutes

Cook Time: 0 minutes

Total Time: 25 minutes

Servings: 4 to 6+ servings* (depending on serving glass)


Ingredients:


-2 cups fresh OR frozen mango (unsweetened)


-1 cup unsweetened mango juice (fresh or store-bought)


-3/4 cup unsweetened coconut milk yogurt OR unsweetened dairy-free yogurt of choice


-1/2 cup unsweetened plant milk (I used almond)


-1 to 2 dates, soaked in hot water 5-15 min (I used Medjool dates)


-half a frozen banana (can sub fresh)


-1/4 cup raw unsalted pistachios, soaked in hot water 20 minutes (can sub raw unsalted almonds OR raw unsalted pumpkin seeds)


-(optional): 1/8 tsp cardamom powder


-(optional): 1/8 tsp rose water


-(optional): 1/4 tsp ground turmeric


-(optional): tiny pinch black pepper


For serving (optional):


-small pinch saffron threads (no more than 2 to 3)


-crushed raw unsalted pistachios


-whipped coconut cream (refined sugar free as needed)


-dried rose petals/buds/blossoms


Directions:


1. Add all ingredients to a high-speed blender. Blend on high 1 to 2 minutes until creamy, scraping down the sides and re-blending as necessary.


2. Adjust flavors/sweetness/consistency to taste, adding more dates, banana, or maple syrup for sweetness, more mango juice for mango flavor, more spices for undernotes, more plant milk to thin out the drink, more ice to make thicker/creamier, etc.


3. Pour into glasses of choice, garnish with the optional toppings or your toppings of choice, and serve. Enjoy!


NOTES:


Best enjoyed fresh. I don't recommend storing for later.


*If you don't want 4-6+ servings of mango lassis, halve or quarter the recipe.
